This is my compilation of an assortment of Indian curries. Mushrooms, jackfruit and chickpeas give this dish amazing textures. Spices are slowly bloomed to allow them to develop a depth of flavour. The sauce is then simmered gently before adding it to a bed of basmati rice and garnishing with cilantro.
