Lemony Cheesecake: Vegan and Gluten Free
I created this cheesecake when my daughter was little and now she’s 30, so I’ve been playing around with this cheesecake for a while! This is it’s final iteration- at least for a now. The base is toasted pecans, and the filling is veggies and cashews. This is topped off with a lemon curd and finished with toasted coconut. Enjoy!
